Simple Country Chicken Fried Steak and Rosemary Mashed Potatoes with Gravy

Ingredients

Steaks
1|2 cup oil
1 pound cube steak (4 pieces)
2 cups flour
Salt
Garlic Powder
Black pepper

Mashed Potatoes
4 large potatoes
Water
1 steam rosemary
Milk
Salt (to taste)

Gravy
2-3 tbsps flour
2 cups milk

Instructions:
In a medium fry pan place oil at medium high heat. While this is warming up, powder the cubed steak with salt, pepper, and garlic powder. Place flour on a plate and pat each steak till completely covered. Place a small chunk of wet flour into the oil till it sizzles. Place each steak separately for more even cooking. Let one side cook till natural juices flow from center, then turn over. Wait till each size is golden brown and has a crispiness to it.

While the steaks are cooking, peel and dice potatoes thin so they will cook to tender before the steaks are finished cooking. Place in sauce pan and cover slightly with water.  Add rosemary stem to the water and bring to a boil. Let boil until a fork pokes easily through it. Drain water. Remove rosemary stem. Mash potatoes with potato masher and add milk to desired consistency.

Once the steak is cooked, drain off 2|3s of the oil, place in flour at medium high heat. Stir quickly to prevent lumps. Once the flour has cooked till slightly browned, add milk slowly and stir. Continue stirring until it thickens to a pancake batter consistency.

Prep time: 5 minute.
Cook time: 30 minutes.

Review:
This is true comfort food for a day when you don't want to make an elaborate meal. It tastes great! Worth the little bit of time it does take to cook! Save the excess oil. I'll have a recipe to it tomorrow!
